To identify and analyze the components
of brand name dried cereal grasses for the following elements. Chlorophyll,
protein, beta-carotene, antioxidant strength, and minerals.
Method
The five products were purchased from a
high volume mail order house and delivered to various laboratories including
Rutgers University Center for Advanced Food Technology, Irvine Analytical
Laboratory, and AAA Laboratory.
Results
Conclusion
In the wheatgrass category Green Kamut
was compared to Pines Wheatgrass for chlorophyll, protein, beta carotene,
antioxidant strength, and minerals including potassium, calcium, and iron.

Lard was spiked at the 1 % level, with extracts of each sample. The antioxidant
